Finding a healthy snack that parents and children can agree on can be hard. My family was blessed several years ago when our dear friend, Ms. Megan, shared her Power Ball Snacks recipe with us. It is packed full of healthy nutrition, and tasty morsels that children crave. The recipe has become a staple in our home for several reasons: they taste so good that my children think they are treats, the recipe is super easy to make, they are a good source of filling protein and fiber packed with lots of vitamins, and they store well in the refrigerator.
My children and I enjoying making these together and it gives an opportunity to talk about why it is important to eat healthy foods and what healthy nutrition means in our family. After making this recipe a few times I realized how popular these are in our home. So we double the recipe now. They store for up to a month in the refrigerator, but they are always gone before then in our home. The tub of Power Balls is on a lower shelf in the refrigerator so the children can help themselves.

Power Ball Ingredients
2 cups Old-Fashioned Rolled Oats (we use GF oats, but regular oats will work just the same)
¾ cup Peanut Butter (we prefer organic smooth)
¼ cup Honey (we use local honey)
1 Tbsp Flax Seed
1 Tbsp Chia Seed
1 Tsp Vanilla Extract
Optional: mini chocolate chips, raisins, chopped nuts (we use Enjoy Life Chocolate Chips). We always add ½ cup of mini chocolate chips, ¾ cup of raisins, and 1 cup of toasted sliced almonds.
Mix all ingredients in a large bowl (you can warm up the PB in the microwave to make it easier to work with). Mix well with a spoon, and then mix together with your hands. Put mixture in the refrigerator for 30 minutes to slightly harden and form together. Remove from refrigerator and use hands to create oatmeal & peanut butter balls. Store in an air-tight container in the refrigerator.
