Sausage Stuffing

My grandmother was from Rhode Island, then moved with her family to South Florida. My family lived there for a time before relocating to Alabama. This is our family’s famous Sausage Stuffing. Everyone wants some! This is not a Southern Style stuffing. But it is the best I’ve ever tasted! It has a wonderful rich flavor.

 

1 lb Hamburger ( You Can Use More If You Wish)

1 lb Pork Sausage, Jimmy Dean’s

1 bunch Parsley

2  Onions, Chopped

1 rib of Celery, Chopped

1    Container of Mushrooms, Sliced

Stale Bread (about 1 loaf)

2    Eggs

Box of Bell’s Seasoning

Cook hamburger and sausage in frying pan. Drain off fat.  When browned and drained, place in a large bowl.  In same pan add 1 stick of unsalted butter and cook onions and celery until soft. Place in Bowl with meat.

Add more butter and cook mushrooms.   When cooked add to bowl with meat and onions.  Add chopped parsley to bowl.  Soak stale bread in water. Drain off the water and add the bread to the bowl. Add eggs and Bells seasoning to taste; I use about half of the small box. Add salt and pepper and mix.  Loosely stuff inside the turkey and neck area and add remaining dressing to pan around the turkey. Let this stay in the pan with the turkey the whole time it is roasting in the oven.  If it looks like it is drying out add a little water over the turkey.  Also when I roast my turkey I baste it with 1 bottle of dry white wine and a stick of melted butter.e  So that all goes into the stuffing
