White Chicken Chili

One of my favorite meals is White Chicken Chili. Not only does it taste AMAZING, but it’s also really simple to make. This recipe is really simple because you just throw everything into the crockpot while you are at work, so when you get home there is minimal cooking!

INGREDIENTS:

  • 1 lb boneless skinless chicken (I always use the tenderloins!)
  • 1 small diced yellow onion or half of a large onion
  • 2 cloves garlic, minced
  • 24 oz. chicken broth
  • 1 can of Northern beans drained and rinsed
  • 1 can of black beans drained (you can use two cans of the same beans if you don’t like one of the options!)
  • 2 4oz. cans diced green chiles (I use mild, but you can use hot.)
  • 1 15oz. can whole kernel corn drained
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cumin
  • 3/4 tsp oregano
  • 1/2 tsp chili powder
  • 1/4 tsp cayenne pepper (or more if you want it hot.)
  • 4 oz cream cheese softened
  • 1/4 cup half and half

 

DIRECTIONS:

  • Put chicken in the bottom of crockpot. Top with salt, pepper, cumin, oregano, chili powder and cayenne pepper.
  • Throw in diced onion, minced garlic, beans, green chiles, corn and chicken broth. STIR
  • Cover and cook on LOW for 8 hours or HIGH for 3 to 4 hours
  • Remove chicken, shred and the put back into the crockpot
  • Add cream cheese and half and half, cover and cook for 15 minutes
  • Stir and serve with favorite chili toppings! (I use sour cream, avocados, cheese, cilantro and tortilla strips!)
